Salmon Chowder

3 TBS butter

1 onion peeled and chopped

2 cloves garlic, minced

3 potatoes (Red Bliss, leave the skin on) Diced

2 cups milk

6oz cooked salmon (or canned salmon)

1 TBS parsley

Salt and pepper to taste

Over medium heat melt butter, add onion and saute until nearly translucent; add garlic, stirring constantly and cooking until soft. Add potato and milk. Cover and simmer on low heat, stirring every few minutes until potatoes are cooked (about 15-20 minutes). Add Salmon and parsley and stir. Enjoy!
