Menu Plan Monday – Planning for The Relevant Conference

In a week and a half I’ll be heading over to Harrisburg for The Relevance Conference, and sorry, this is probably not the last time you’ll hear me talk about it!

I’ll be leaving my hubby with the kids for 3 days and although I’m sure he’ll be just fine, I wanted to plan ahead so that he does not have to dig around for meals or snacks while I’m gone.

So, in addition to this week’s menu plan I’m including what I”m doing to prepare food and snacks for the family while I’m away.

This week:

Monday: Taco Salad!
Tuesday: Kilbasa with greenbeans and baked potatoes
Wednesday: Burritos w/ leftover taco meat plus beans, rice and other toppings
Thursday: Meatloaf (Using Williams Sonoma’s amazing Meatloaf Starter, if you haven’t tried it you MUST!!!) with mashed potatoes (made with the extra baked potatoes made on Tuesday) and veggies.
Friday: Pizza Night!
Saturday: Leftover Buffet
Sunday: Steak on the grill with Mushroom risotto and salad


Baking this week:
Blueberry muffins
Dinner rolls
Chocolate chip cookies
Quiche for the freezer
Pumpkin Chocolate chip cookies (to freeze and bring to share with my roommates at the conference!)
